“CLASSIC VANILLA CUPCAKES” IS IN:
NEXT RECIPE:  CREAM CHEESE CUPCAKES

CLASSIC VANILLA CUPCAKES 
1/2 cup (1 stick) softened butter
3/4 to 1 cup sugar
2 eggs
2 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup cold milk

Preheat oven to 350°F.

Cream butter and sugar. Add eggs 1 at a time, beating after each addition. Stir in vanilla.

In a separate bowl, stir together all dry ingredients. Add to butter mixture; stir in milk.

Place paper cupcake liners in pan. Fill each 2/3 full.

Bake at 350°F for 18 to 24 minutes.

When cooled, frost with your favorite vanilla frosting, if desired.

Yield: 12 cupcakes.

These were ok, the texture was nice. The only thing I did not care for was that they were a little sweet. So much, that it was cloyingly sweet when paired with buttercream, much like the typical "boutique" cupcakes. I love sweets, and can usually handle a lot, but this recipe was a bit too sweet. Not even my children cared for it even after taking the buttercream off the top.

I used apple sauce instead of the oil. They came out spongy and stuck to the cupcake liners. Would be great for trifle or Tiramisu as they hold up to liquids. Used them for strawberry short cake bottoms, they were fine. Not great just fine.

I work for a cupcake kitchen, pretty basic recipe. The best kind of vanilla extract is those of other countries the one I use is Dominican vanilla extract usually can be found in Spanish/ diversified neighborhoods. Definitely say add at least a tbsp. of butter more. Thanks... Have fun baking!

Me and a friend of mine made these for the Broncos super bowl game. I wanted something easy, fast and delicious, these were it. I even added a little blue color too it as well, these were not the sweetest cupcakes but with a dab of orange frosting these are great. Thank you for such a wonderful recipe, I will definitely be making these again. GO BRONCOS!

When I made the cupcakes I made 12 and still have some batter left over. I think it can make 12 at the least and 24 at the most. Just a tip!!

This is a great, simple and quick recipe. I did however add half a cup of sugar and 2 tsp of vanilla on top of the 2 that the recipe calls for. The consistency and taste is just right! Thanks for sharing
