“VANILLA CUPCAKES” IS IN:

VANILLA CUPCAKES 
2 1/4 cups sifted cake flour
1/4 tsp. salt
3 teaspoons baking powder
1 cup sugar
1/2 cup regular (not unsalted) melted butter (no substitutes)
3/4 cup milk
2 eggs, beaten
1 1/2 teaspoons vanilla

These cupcakes have a delicate crumb because cake flour is used.

Preheat oven to 375°F. Grease muffin cups well or line with buttered paper cups (use any size muffin tins for this recipe).

Sift flour and other dry ingredients together.

In a separate bowl, combine butter, milk, eggs and vanilla. Stir into the flour mixture.

Fill prepared muffin tin with batter, filling 2/3 full.

Bake in a preheated oven until a toothpick inserted in center comes out clean or for 10-20 minutes (depends upon size of muffins).

Frost tops with vanilla frosting. Sprinkle tops with coconut, if decided. Or frost with chocolate frosting and sprinkle tops with chopped nuts.

I tried this recipe and found them to be dense and taste like flour. I did a second batch and added more vanilla and honey. Not sure I would use this recipe again.

Even the 1 1/2 tsp. vanilla called for in this recipe is more than normal. Most recipes don't call for 2 tsp. vanilla! I would suggest that if you couldn't taste the vanilla, you should toss it and buy a better brand or a newer bottle. Neilsen-Massey is a good brand of vanilla to use.

When making cupcakes/muffins, it's important not to overmix or they will become dry, tough and tunneling without much taste. Mix only until ingredients come together, less than 2 minutes. Also, be sure not to overbake!

I tried this (substituted the cake flour for whole wheat) and they were ok...a little heavy and dry but it could be because of the whole wheat flour...but my kids still loved them...

Personally I thought these were amazing, though they were more of a muffin than a cupcake. This is a recipe I plan on using again, but I'm gonna stick to calling them muffins. Btw I added chocolate chips and they were amazing!

i used this as a mini cake batter V.s a cupcake batter, and it rocked! i added vanilla pudding(jello) as a filling and everybody loves it! :D

They are pretty good. But when their done they look like lumpy muffins. I didn't bother to frost them, i'll just categorize them as vanilla muffins. They are yummy though!
