NEXT RECIPE:  VANILLA CUPCAKES

VANILLA CUPCAKES
2 1/4 cups sifted cake flour
1/4 tsp. salt
3 teaspoons baking powder
1 cup sugar
1/2 cup regular (not unsalted) melted butter (no substitutes)
3/4 cup milk
2 eggs, beaten
1 1/2 teaspoons vanilla

These cupcakes have a delicate crumb because cake flour is used.

Preheat oven to 375°F. Grease muffin cups well or line with buttered paper cups (use any size muffin tins for this recipe).

Sift flour and other dry ingredients together.

In a separate bowl, combine butter, milk, eggs and vanilla. Stir into the flour mixture.

Fill prepared muffin tin with batter, filling 2/3 full.

Bake in a preheated oven until a toothpick inserted in center comes out clean or for 10-20 minutes (depends upon size of muffins).

Frost tops with vanilla frosting. Sprinkle tops with coconut, if decided. Or frost with chocolate frosting and sprinkle tops with chopped nuts.

Thinking about make this but is the cake flour the same as flour? If not where can you buy cake flour?

 Debbie (District of Columbia) replies:
Alex, no cake flour is different and is sold in your supermarket. "Swans Down" is one brand of cake flour you're likely to find.

Delicious. A little bit dry. I added 1 tbsp of pumpkin pie spice to mine since it was october and then I frosted mine with a vanilla buttercream frosting then sprinkled cinnamon on top and decorated with candy corn pieces. Tasted amazing!

It was easy and delicious! I also like the fluffiness of the cup cake. I agree it is more like muffin and just love them! Thanks for sharing! I used substitute cake flour since I don't have one on hand.
