“VANILLA CUPCAKES” IS IN:

VANILLA CUPCAKES 
2 1/4 cups sifted cake flour
1/4 tsp. salt
3 teaspoons baking powder
1 cup sugar
1/2 cup regular (not unsalted) melted butter (no substitutes)
3/4 cup milk
2 eggs, beaten
1 1/2 teaspoons vanilla

These cupcakes have a delicate crumb because cake flour is used.

Preheat oven to 375°F. Grease muffin cups well or line with buttered paper cups (use any size muffin tins for this recipe).

Sift flour and other dry ingredients together.

In a separate bowl, combine butter, milk, eggs and vanilla. Stir into the flour mixture.

Fill prepared muffin tin with batter, filling 2/3 full.

Bake in a preheated oven until a toothpick inserted in center comes out clean or for 10-20 minutes (depends upon size of muffins).

Frost tops with vanilla frosting. Sprinkle tops with coconut, if decided. Or frost with chocolate frosting and sprinkle tops with chopped nuts.

I made these for a birthday I was at and the kids loved them, now the only thing I would say is that I think they were a bit TOO sweet for the children were complaint about them other than that they were fab.

They were good. I beat them with a mixer and they were not too dense. I didn't add enough vanilla (my fault), used buttercream frosting. Amazing!

Hi! I'm 10 years old and I added red and white food coloring for valentines day and this recipe was so easy beside mixing the flour and other ingredients. I made then with my 8 year old brother and they were delicious!! my whole family had two cupcakes and I may say I was a little worried with the thickness but it was perfect!! Now I have to bake a chocolate cake!! I would definitely do this again

Amazing! These cupcakes were delicious! The flavors are great and they are nice and moist and fluffy! It is very important that you sift your dry ingredients once they are mixed. It makes the recipe so much better! I did mine neon food colored and made them 100% by myself. I am 12 years old. They are amazing, friends and family loved them. Definitely making them again soon!

Excellent recipe! Made these cupcakes in a flash and they came out light, fluffy and moist! Kids loved them! I did not have cake flour on hand as I used it the day before for my cookies. Substituted with reg flour, but did SIFT it as well with all dry ingredients. Worked out perfect!! Thanks
