POTATO PANCAKES 
2 c. leftover mashed potatoes
1/4 c. flour
1/4 c. milk
1 egg, beaten
1 tbsp. onion, minced
1 tbsp. green pepper, minced
Bacon drippings or cooking oil
Salt & pepper to taste (optional)

Combine mashed potatoes, flour, milk, egg, onions and green peppers. Salt and pepper as desired. Form into 3 inch round patties and fry in bacon drippings or cooking oil. Brown on both sides. Drain and serve.

Great way to use those leftover mashed potatoes. Served ours for breakfast with sausage. I have to wonder if just a little shredded cheese in the mix would be yummy.

Nice simple recipe but I never have "leftover" or so small go with eggs n stuff. I use 3 raw russets, with a zucchini also grated, chopped onion, flour or cornmeal, egg. Put a heavy bowl on top to drain potato water, lemon juice to prevent browning; in bacon drippings or Crisco, drain and them in foil or oven, dollops of sour cream or applesauce. Basically the Slovak style except zucchini adds natural sweetness. Great Lenten fare.

I made these this morning and added shredded cheese into the mix. They were absolutley fabulous! The only complaint would be that they stuck in the pan and took a long time to brown, even tho i cooked them on high.

Easy.....to mix, to cook! It was still too 'soupy' with 1/4 cup flour so I added bit more flour but even then I had to use a lg. tbl.spoon to put into skillet but all turned out well & was delicious! And, I used grn onions had on hand instead of onions/grn peppers.
