SQUASH AND STUFFING SIDE 
a small yellow squash (zucchini will work too)
small onion (white or red)
1 large tomato or a few small ones or a small can of diced tomatoes (I prefer fresh ones)
1 pkg. stuffing mix (your choice) chicken or turkey broth (optional)
1 1/2 to 2 cups cooked rice
your favorite spices and seasonings

Thinly slice or dice yellow squash. Chop and dice onion and cut up tomato. Heat skillet and add some light olive oil. (I add an olive oil and basil dressing while frying). Sauté the vegetables, don't brown just lightly golden. I put the squash in first then the onions and add tomatoes near the end.

Make a package of stuffing as per instructions. Mix the squash into it. Then I add a little bit of chicken/turkey broth or gravy (optional) and I make about a cup and a half to 2 cups of rice and mix that all together. Add whatever spices you like and this makes a fast and yummy fall and winter side dish, great for thanksgiving!

You could even add leftover turkey or chicken right into it. I have also added spinach to it and that is very good too. Sometimes I top it with Parmesan cheese. Very fast and versatile! Enjoy!
