SHRIMP SANDWICH SUPREME 
4 slices wheat bread or wheat buns
8 oz. cooked med. shrimp
1/2 c. light mayonnaise
1 tbsp. prepared mustard
1/2 tsp. Worcestershire sauce
1/3 c. finely chopped, diced celery
1 egg white
2 tbsp. grated Parmesan cheese

In a bowl, blend the mayonnaise, mustard, Worcestershire sauce, and celery. Whisk the egg white until soft peaks form. Fold into mayonnaise mixture. Fold in shrimp. toast the bread on one side. Place shrimp mixture on top. Sprinkle with Parmesan cheese. Broil in the oven at 400 degrees for about 4 minutes until lightly browned on top. Serve immediately. Makes 4 servings.

SUBSTITUTIONS: You may use crab meat or crab imitation meat instead of shrimp. You may use grated cheddar cheese instead of Parmesan cheese.
