CHOCOLATE POUND CAKE 
Vegetable cooking spray
1 3/4 c. sifted cake flour
2 tsp. baking powder
1/4 tsp. salt
3 tbsp. unsweetened cocoa
1/4 tsp. ground cinnamon
3/4 c. sugar
1/2 c. vegetable oil
1/2 c. evaporated skimmed milk
1 tbsp. vanilla
4 egg whites, stiffly beaten

Coat the bottom of an 8 1/2 x 4 1/2 x 3 inch loaf pan with cooking spray; dust with flour and set aside. Combine cake flour and next five ingredients in a large bowl. Add oil, milk, and vanilla; beat at medium speed of electric mixer until batter is smooth (batter will be thick). Add one-third of egg whites and stir mixture gently; fold in the remaining egg white. Pour batter into prepared pan. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in a center comes out clean. Cool in pan 10 minutes; remove from pan and cool on a wire rack.
