CAULIFLOWER OR BROCCOLI
CASSEROLE
 
2 (10 oz.) pkgs. or 1 (20 oz.) bag frozen vegetables
1/2 c. frozen mixed vegetables (opt.)
1/2 lb. Velveeta cheese
1/4 lb. butter
4 oz. Ritz cracker crumbs (10 crackers)

Thaw vegetables thoroughly. Drain if necessary. Roll out crackers for crumbs. Salt and pepper to taste and place in 1 quart casserole. Cube cheese. Melt half of the butter with cube cheese. Pour over vegetables. Melt rest of butter, mix with cracker crumbs and spread on top of vegetables. Bake in 350 degree oven for 50 to 60 minutes. Mixed vegetables are used only to give color to casserole.
