STUFFED BAKED ZUCCHINI 
6 sm. zucchini
1 c. cooked rice
1 lb. chopped meat
1 (4 oz.) can mushrooms
1/2 c. grated cheese
1 sm. onion
1 tbsp. parsley
Pepper and salt to taste
1/4 c. bread crumbs
1 (8 oz.) can tomato sauce

Wash zucchini, do not peel. Cut in half lengthwise. Remove pulp to form shell. Refrigerate. Saute chopped meat, mushrooms, and onions. Add salt, pepper, and parsley. Add meat mixture to cooked rice and mix well. Fill zucchini and place in casserole. Top with tomato sauce, bread crumbs and cheese. Bake at 350 degrees until squash is tender, about 30 minutes.
