SWEET POTATO SOUFFLE 
3 c. cooked and mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
2 lightly beaten eggs
3 tbsp. melted butter
1/2 c. milk
1 tsp. vanilla extract

Drain potatoes and mash with a mixer. Mix other ingredients together and add to sweet potatoes. Put in 1 quart baking dish.

TOPPING:

3 tbsp. melted butter
1 c. brown sugar
1/2 c. all purpose flour
1 c. chopped pecans

Mix topping ingredients together and crumble on top of sweet potatoes. Bake at 350 degrees for 35 minutes.
