SWEET POTATO SOUFFLE | |
2 c. cooked mashed sweet potatoes 1 1/4 c. sugar 2 eggs 3/4 stick butter 1/2 c. milk 1 tsp. vanilla Soften butter. Add potatoes, milk, eggs, sugar and vanilla. Pour into casserole and bake at 400 degrees for 20 minutes or until done in center. Topping: Combine 1/2 cup chopped pecans, 1/2 cup brown sugar and 3/4 stick butter. Spread on baked souffle. Bake at 400 degrees for 10 minutes longer. |
