SWEET POTATO SOUFFLE 
2 c. (3-4 potatoes), mashed
1 1/4 c. sugar
2 eggs, slightly beaten
1/2 stick butter, melted
1/4 c. milk
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Mix sugar, eggs, butter, milk and spices with cooked and peeled potatoes until smooth (without lumps). Pour in buttered casserole dish. Bake 20-30 minutes in 400 degree oven.

TOPPING:

1/4 c. crushed corn flakes
1/2 c. chopped pecans
1/2 c. brown sugar
1/2 stick butter

While casserole is cooking, prepare the topping. Melt butter. combine other ingredients and spread over potatoes, returning to the oven for 10 minutes (or until the topping is bubbly). Serves 12.
