SWEET POTATO SOUFFLE | |
3 c. mashed sweet potatoes (fresh potatoes are best) 1 c. sugar 1/2 tsp. salt 2 eggs, lightly beaten 1/2 stick butter, melted 1/2 c. milk 1 tsp. vanilla Mix together and pour in greased 8 x 12 inch baking dish. Cover with topping; bake at 350 degrees for 35 minutes. TOPPING: 1/3 stick butter 1 c. brown sugar 1/3 c. flour 1 c. pecans or walnuts, chopped Melt the butter. Add brown sugar, flour, and the nuts. Most people don't realize they're eating sweet potatoes! |
