SWEET POTATO LOAF CAKE 
1 1/2 c. sugar
1/2 c. vegetable oil
2 eggs
1/3 c. water
1 3/4 c. all-purpose flour
1 1/2 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. baking soda
1/2 tsp. salt
1 c. mashed sweet potatoes
1/2 c. pecans or walnuts
1/2 c. raisins

Combine sugar, oil, eggs, and water; beat at medium speed of electric mixer just until combined. Combine next 5 ingredients; add to egg mixture, mixing just until moistened. Stir in sweet potatoes, pecans, and raisins.

Spoon batter into 2 greased and floured 1 pound coffee cans. Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. Let cool in cans 10 minutes; remove from cans to complete cooling. Yield: 2 loaves.
