SWEET POTATO LOAF CAKE 
1 1/2 c. sugar
1/2 c. oil
2 eggs
1/3 c. water
1 3/4 c. plain flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 c. cooked, mashed sweet potatoes
1/2 c. raisins
1/2 c. chopped nuts

Preheat oven to 350 degrees. Combine sugar, oil, eggs, and water; beat at mixer speed medium. Combine dry ingredients, add to egg mixture, mixing just until moistened. Stir in sweet potatoes, raisins and nuts. Spoon into 2 greased and floured 1 pound coffee cans. Bake 1 hour or until wooden pick inserted in center comes out clean. Let cool 10 minutes; remove from cans.
