SWEET POTATO CAKE | |
2 c. shredded sweet potatoes 2 c. sugar 1 1/2 c. corn oil 3 eggs Sm. can crushed pineapple 1 c. pecans, chopped 2 tsp. vanilla Beat eggs, add oil, flour, sugar. Blend in sweet potatoes and vanilla. Mix well. Add nuts. Bake in two 8 or 9 inch pans at 350 for about 45 minutes or until tests done with toothpick. Frost with: CREAM CHEESE FROSTING: 8 oz. cream cheese 1 stick butter 2 lbs. powdered sugar 1 tsp. vanilla Blend very well. |
