GARLIC ROAST POTATOES 
3 lbs. sm. red potatoes, quartered, unpeeled
3/4 c. olive oil
4 tbsp. butter
12 cloves garlic, minced
Salt and pepper
Italian flat-leaf parsley

Heat oven to 400 degrees. Toss ingredients together and spread on a roasting pan. Roast 30-40 minutes, tossing potatoes once or twice until they are brown and just tender. Garnish with parsley. Serves 8-12.
