LORRAINE'S SALMON PATTIES WITH
LEMON SAUCE
 
1 can pink or red salmon (reserve liquid)
1/4 c. crushed soda crackers
1 egg, beaten
Dash of pepper

Drain salmon and reserve liquid. Flake salmon and add soda crackers, pepper and egg. Form into cakes and fry in 1 tablespoon oil in teflon pan. Serve with sauce.

SAUCE:

To reserved liquid add water to make 3/4 cup. Stir in: 2 tbsp. lemon juice 2 tbsp. ketchup 1 tbsp. honey, optional

Heat in microwave or on top of stove until thickened.

Since microwave ovens vary in power, you may need to adjust your cooking time.
