COCONUT DATE BARS 
8 oz. dates, pitted and chopped (scissors are super for chopping)
1 c. sugar
1/2 c. butter, softened
1 egg, beaten
1 tsp. vanilla
2 1/2 c. rice cereal (i.e., Rice Krispies)
Shredded coconut for coating

Mix dates, sugar, butter and egg in large sauce pan. Cook over medium heat until sugar is dissolved and dates are softened. Add vanilla and rice cereal and mix well. Drop by teaspoonfuls onto waxed paper spread with coconut. Roll each cookie in coconut until well covered on all sides. Cookies keep well in covered containers.
