POLYNESIAN BARS (Sugar-free) 
CRUMB MIXTURE:

1 1/2 c. flour (whole wheat or enriched white)
1 1/2 c. rolled oats
1/2 tsp. salt
3/4 c. soft butter
1/2 c. unsweetened coconut (optional)
1/2 c. chopped nuts (optional)

Mix the above together with hands.

FILLING:

4 c. chopped dates
1 (#2) can (2 1/2 c.) unsweetened crushed pineapple (not drained)
3/4 c. water
1 tsp. vanilla

Cook filling until thick and smooth.

Spread half of crumb mixture evenly on the bottom of a greased 9x12 baking pan and pat down. Spread on date mixture (clear to edge) and sprinkle on remaining crumb mixture, again patting down well. Bake at 350 degrees for 30 minutes. Cool and cut into squares. May be served with whipped topping.
