PUMPKIN MUFFIN 
1 egg
1/2 c. milk
1/2 c. pumpkin
1/4 c. melted shortening
1 1/2 c. sifted flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Blend egg and milk with fork. Melt shortening and add with pumpkin to egg/milk mixture. Sift dry ingredients into bowl. Add wet ingredients, mix only until barely blended. Don't over mix!

Measure into paper lined muffin pans until 3/4 full. Sprinkle 1/4 teaspoon sugar over unbaked batter. Bake 18-20 minutes at 400 degrees. Serve hot with butter. Makes 10 large or 12 medium muffins.
