PUMPKIN MUFFIN 
2 eggs
1/2 c. vegetable oil
2 1/4 c. flour
1 tsp. baking soda
2 c. sugar
1 (16 oz.) can pumpkin
1 tsp. pumpkin pie spice
1 tsp. salt

FILLING:

6 oz. cream cheese
1 tbsp. sugar
1 egg

Mix eggs, sugar, oil and pumpkin together. Add pumpkin mixture to flour mixture. Beat for 30 seconds. Fill 24 muffin tins 1/2 full, then divide cream cheese mixture, then rest of pumpkin. Bake at 350 degrees for 18 to 20 minutes.

FILLING: Beat until mixed.
