PUMPKIN OAK BRAN MUFFINS 
1 1/2 c. oat bran
1/2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. low-fat milk
2 tbsp. Canola oil
Vegetable cooking spray
2/3 c. brown sugar, firmly packed
1 tsp. pumpkin pie spice
1 c. canned pumpkin
2 egg whites, beaten

Combine oat bran, brown sugar, flour, baking powder, pumpkin pie spice, and salt in large bowl. Stir well. Combine pumpkin, milk, egg whites, and oil together; stir well. Add to dry ingredients, stirring just until dry ingredients are moistened. Spoon into muffin pans coated with vegetable cooking spray, filling 2/3 full. Bake at 425 degrees for 20 minutes. Remove from pans immediately. Makes 1 dozen.
