PUMPKIN-OAT BRAN MUFFINS 
1 1/2 c. oat bran
2/3 c. firmly packed brown sugar
1/2 c. flour
2 tsp. baking powder
1 tsp. pumpkin pie spice
1/4 tsp. salt (optional)
1 c. mashed cooked pumpkin
1/2 c. skim milk
2 egg whites, beaten
2 tbsp. vegetable oil
Vegetable cooking spray

Combine oat bran, brown sugar, flour, baking powder, pumpkin pie spice and salt in a large bowl; stir well.

Make a well in center of mixture. Combine pumpkin, skim milk, egg whites and vegetable oil; stir well. Add to dry ingredients, stirring just until dry ingredients are moistened.

Spoon into muffin pans coated with cooking spray, filling 2/3 full. Bake at 425 degrees for 20 minutes. Remove from pans immediately. Makes 1 dozen muffins.
