PUMPKIN OAT BRAN MUFFINS 
1 1/2 c. Oat Bran
2/3 c. firmly packed brown sugar
1/3 c. all-purpose flour
2 tsp. baking powder
1 tsp. pumpkin pie spice
1/4 tsp. salt
1 c. mashed cooked pumpkin
1/2 c. skimmed milk
2 egg whites, beaten
2 tbsp. vegetable oil
Vegetable cooking spray

Combine first 6 ingredients in a large bowl, stir well. Make a well in the center of mixture. Combine pumpkin and next 3 ingredients; stir well. Add to dry ingredients, stirring just until dry ingredients are moistened. Spoon into muffin pans coated with cooking spray, 2/3 full. Bake at 425 degrees for 20 minutes. Remove from pans immediately. Serve warm or at room temperature. Yield: 1 dozen. 126 calories each.
