BRAN PUMPKIN MUFFINS | |
1 and 1/4 cup Kellogg's Bran Buds cereal 2/3 cup milk 3/4 cup seedless raisins 1 cup canned pumpkin 1/2 cup sugar 1 egg 1/2 cup soft shortening 1 and 1/2 cup flour 2 and 1/2 teaspoons baking powder 1 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon nutmeg Stir to combine Kellogg's Bran Bud cereal, milk, seedless raisins, pumpkin, sugar. Let stand 2 minutes to soften. Add to bran mixture and beat well egg and shortening. Sift together flour, baking powder, salt, cinnamon, nutmeg. Add to bran mixture. Stir only until combined. Fill greased 2 and 1/2 inch muffin pan cups 3/4 full. Sprinkle lightly with sugar. Bake in moderately hot oven (400°F) about 30 minutes or until muffins are golden brown. Serve hot. Makes 12 pumpkin muffins. |
