PUMPKIN-OAT BRAN MUFFINS | |
1 1/2 c. unprocessed oat bran 1/2 c. firmly packed brown sugar 1/2 c. all-purpose flour 2 egg whites, lightly beaten 2 tbsp. vegetable oil Vegetable cooking spray 1/4 tsp. salt 1 c. cooked, mashed pumpkin (canned okay) 1/2 c. skim milk 2 tsp. baking powder 1 tsp. pumpkin pie spice Preheat oven to 425 degrees. Combine oat bran, brown sugar, flour, baking powder, pumpkin pie spice, salt in a large bowl, stir well. Make a well in center of mixture. Combine pumpkin, milk, egg whites and vegetable oil; stir until moistened. Spoon into muffin pans coated with cooking spray, filling three-fourths full. Bake for 20 minutes in 425 degree oven. Remove from pans immediately; serve warm or at room temperature. Yield: 1 dozen. About 138 calories each. 4.3% protein, 3.6 fat, 22.5 carbohydrate, 0 cholesterol. BANANA-OAT BRAN: Substitute 3/4 cup mashed ripe bananas (1 medium) for pumpkin. About 144 calories each. APPLE-OAT BRAN: Substitute 1/2 cup minced apple for pumpkin. Substitute apple pie spice for pumpkin pie spice. Add 1 teaspoon ground cinnamon to dry ingredients. Yield: 1 dozen. 138 calories each. |
