WEIGHT WATCHERS PUMPKIN MUFFINS 
1 c. pumpkin
2 eggs
1 tsp. vanilla
2/3 c. dry milk
6 tbsp. flour
1 tsp. cinnamon
2 tsp. baking soda
1 tsp. baking powder
5 packs Equal
1/2 c. grated carrots
4 tbsp. raisins

Mix together pumpkin, eggs and vanilla. Add remaining ingredients. Pour directly into muffin pans. Do not use paper cups. Spray muffin pans with Pam before adding batter.

Bake at 350°F for 15 minutes or until done.

Servings 12

Nutrition information (per serving) 84 calories from fat, 2.9g total fat, 42.2mg cholesterol, 341.3mg sodium, 193.9mg potassium, 11.3g carbohydrates, 1.1g fiber, 6.1g sugar, 3.7g protein.

Great recipe. I was hesitant at the beginning because I didn't find that it had enough flour to bake and rise, but it did! I also added sunflower seeds to the mix and used whole wheat flour. I have also used chocolate chips in this recipe as well. So light! So flavourful!

I don't even remember what the original recipe was anymore, but I mess with this one a lot. This time I added zucchini because I was almost out of carrots. I have never, ever used artificial sweetener in this recipe. Yikes! Way to make something really healthy totally toxic. I have experimented with several others, though. Molasses work well, except that this recipe doesn't need anymore liquid, so I add fructose (you can get it in bulk at the health food store). It adds a little more dry ingredients and sweetens the recipe. I also increase the raisins by a lot. I also add wheat bran instead of half of the flour to increase the fiber count. I make small muffins or a coffee cake and then cut it into small pieces so that it still works out to two points. Don't forget that this needs to be refrigerated. If you leave it out it will mold. Too many fresh ingredients.

Hi! This is a FABULOUS recipe, but I have simplified it! Just use 1 spice cake mix, 1 (15 oz.( can of pumpkin and 1 egg! I also added sugar free chocolate chips to this! Wonderful! Bake 20-25 minutes at 350°F. Super SIMPLE!!

I first have to say a huge "THANK YOU" to the person(s) who shared this recipe! I remember this recipe from many years ago, when my mom was a member of weight watchers. Over the years, the copy we had of this recipe was lost. I have searched many different times over the years, but all I had found were other WW recipes that were different by using cake mix.. (which may be just as yummy).
Well, long(er) story short, after looking in my pantry for something to bake, I saw a can of pumpkin, and I decided to try to do a general search for a healthy sugar-free pumpkin muffin recipe to see what I could find and this was listed in the search. (not to mention the 1st recipe I viewed). I could not believe my eyes, I knew this was the same recipe I had (and lost) years ago just by the list of ingredients, metrics, and nutrition info.

I just knew I had to reply... I know it may seem a bit foolish to some, but it's more than just for the fact of obtaining this healthy recipe again for myself (a severe diabetic with other health issues).
It also brings back fond memories of my beloved mother, (she passed away 15 years ago, at age 54)
I remember baking and enjoying these muffins together.

These muffins were one of her favorites, too.
