CHINESE CHICKEN WINGS 
2-3 lb. chicken wings
1 c. soy sauce
5 tbsp. sugar
1 tbsp. sherry (may be omitted)
1 or 2 cloves garlic, crushed
Pinch of salt

In large mixing bowl mix all ingredients except wings until sugar dissolves. Cut wings at joints and discard tips. Add wings to sauce and marinate for 2 hours, stirring occasionally.

In two frying pans, add oil to 1/4-inch deep on medium heat. Add wings, one by one. Fry until brown on both sides. Then cover and simmer on low to very low heat for 10-20 minutes, turning several times to prevent burning. Drain on paper towels.
