PUMPKIN MINI-MUFFINS 
1 1/3 c. sugar
1/3 c. shortening
2 eggs, beaten
1 c. pumpkin
1 3/4 c. flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1/3 c. milk
1/2 c. chopped nuts (optional)

Preheat oven 350 degrees. Grease mini-tins/pans.

Combine sugar and shortening; beat until fluffy. Add beaten eggs and pumpkin. Mix together.

Combine the dry ingredients and add to batter alternating with milk.

Optional: 1/2 cup nuts may be added.

Bake at 350 degrees in greased pan: mini-muffins 10-12 minutes; bread loaf 1 hour.

I left out the nuts and substituted butter (slightly more than 1/3 cup) for shortening. They came out fantastic! I will definitely be making these again. I highly recommend drizzling or spreading some cream cheese frosting on top.

These are vanishing quickly at my house! I didn't have white sugar, so I used brown sugar, and only used a little less than a cup of it, then drizzled a glaze made up of 1/2 cup powdered sugar, 2 tsp. milk and 1/2 tsp. vanilla. Perfect amount of sweetness!

I have made these, but instead of milk, I add cream cheese. Then I have a tool that pushes in cream cheese in the center of the tart. I had so many compliments on this and everyone wants the recipe.

You can also swirl cream cheese in a muffin.
