CHOCOLATE CHARLOTTE RUSSE 
4 oz. (4 sq.) unsweetened chocolate
3/4 c. granulated sugar
1/3 c. milk
6 eggs, separated
1 1/2 c. unsalted butter
1 1/2 c. confectioners' sugar
1/8 tsp. salt
1 1/2 tsp. vanilla
3 doz. ladyfingers, split
1 c. heavy cream, whipped
Shaved, unsweetened chocolate

Melt chocolate squares in top of double boiler over hot water. Mix granulated sugar, milk and egg yolks. Add to chocolate and cook until smooth and thickened, stirring constantly. Cool. Cream butter well. Add 3/4 cup confectioners' sugar and cream thoroughly. Add chocolate mixture and beat well. Beat egg whites with salt until stiff; gradually beat in remaining 3/4 cup confectioners' sugar. Fold into chocolate mixture. Add vanilla. Line bottom and sides of deep 9 inch springform pan with split ladyfingers. Put in alternate layers of one-third of mixture and remaining ladyfingers. Chill overnight. Remove to cake plate. Garnish with unsweetened whipped cream and shaved chocolate.

I accidentally used semi-sweet chocolate, but when I realized it, I just cut out most of the sugar and fortunately the balance was good. I garnished the cake with the whipped cream by using a cake decorator tip and a plastic bag. Everyone loved the presentation, but the taste was amazing! So smoothe and creamy! You will love it. We all did! I WILL make this again. 3 Dozen Lady Fingers will seem like 72, and that's what you'll need (3 pkgs.)

I've been making this recipe for at least 40 years, finding it initially in a Woman's Day cookbook series. It never fails to impress people and looks very elegant. I spread whipped cream on top, pipe shells around the edge and then spread chocolate curls or grated chocolate on top. This is a show-stopper every time and tastes wonderful!

Ellen, I made this about 40 years ago also and did not have the recipe anymore so googled it. Then read your review and then Voila! That was where I got the original recipe from WOMENS Day which I did not have anymore. I Remember this being so fabulous! I'm going to try it again. Thank you so much for sharing. Here I am making it 40 years later!
