GAZPACHO - Cold Soup | |
1 (46 oz.) can tomato or V-8 juice 4 tsp. beef bouillon or 4 cubes 2 cucumbers, diced 2 tomatoes, diced 1 green pepper, diced 1/2 c. scallions or 1/2 c. diced onion 1 clove garlic, minced 3 tbsp. lemon or lime juice 1 tbsp. Worcestershire sauce 2 tbsp. olive oil 4 tbsp. red wine vinegar 1/2 tsp. hot sauce Salt & pepper to taste Dice vegetables, mince garlic and combine with liquid ingredients. Refrigerate for 1 hour to season. Serve in 4 (8 ounce) paper cups with spoons. Serves 6-12 people. |
