GAZPACHO COLD SOUP | |
1 clove garlic 1 med. onion, sliced 1 cucumber, sliced 3 tomatoes, peeled 1 green pepper, seeded 2 eggs 1/8 tsp. salt 1/2 tsp. cayenne pepper 1/4 c. white vinegar 1/4 c. olive oil 3/4 c. tomato juice Puree the first 6 ingredients in a blender. Season with remaining ingredients and chill. Garnish: 1 cup bread crumbs, 2 tablespoons olive oil, 1 clove garlic, minced, 1 cucumber, diced, 1 onion, sliced, 1 green pepper, chopped. Brown bread crumbs in the oil with garlic. Add the croutons, cucumber, onion and green pepper just before serving. |
