COLD SHRIMP SOUP 
1 qt. bottle clam flavored tomato juice (Clamato)
1/2 c. chopped cucumber
1/3 c. thinly sliced green onion
1/4 lb. cooked shrimp or 4 1/2 oz. can, rinsed
2 tbsp. olive oil
2 t tbsp. red wine vinegar
1 tbsp. sugar
1 tsp. dill weed
1 (3 oz.) pkg. cream cheese, cut in 1/4 inch cubes
1 med. avocado, diced
1 clove garlic, pressed
1/4 to 1/2 tsp. Tabasco

Mix and chill makes 6 servings. Will last 2 days with shrimp.

This is the best cold summer soup ever! I've been making it for years (a very similar version anyway) and the only thing I'd change would be to up the cucumber to 1 cup and reduce the sugar to 1 tsp.
