“GRANOLA” IS IN:

GRANOLA 
4 cups oatmeal (not quick)
1/4 tsp. salt
1 tsp. cinnamon
1/2 cup honey, agave or maple syrup (or a combination)
1/2 vegetable oil
1 tsp. vanilla extract
1/2 cup raisins
1 cup chopped nuts

Preheat oven to 350°F.

Sprinkle oats with salt and cinnamon. Mix and set aside. In a medium saucepan, combine honey and oil. Heat over medium heat for 3 to 5 minutes, then stir in the vanilla.

Pour over oats and stir with a wooden spoon to coat well. Spread oats out evenly on a oiled or buttered cookie sheet.

In preheated oven, bake for 25 to 35 minutes. Stir in raisins and nuts.

We use 1/2 cup large nuts, chopped (such as pecans, pistachios, macadamias, slivered blanched almonds and walnuts). We add another 1/2 cup of small nuts (shelled pumpkin, sunflower seeds, soy nuts). The raisins can be soaked in a warm bath of water with a little vanilla or rum for extra flavor before adding if serving the granola right away; for storage, the raisins are best left dry.
