“GOOD OL' APPLE PIE” IS IN:

GOOD OL' APPLE PIE 
CRUST:

2 cups Enjoy LifeŽ Cinnamon Crunch granola
2 tbsp. tapioca or rice flour
1 tbsp. brown sugar
3 tbsp. butter or safflower oil
dash of salt (optional)

Preheat oven to 350°F.

Grind granola in food processor or blender until fine. Add remaining crust ingredients and process until well blended. Press crust into greased 8 or 9-inch pie plate.

Bake at 350°F for 5 to 10 minutes or until golden brown.

FILLING:

6 cups Granny Smith apples, peeled, cored and sliced thinly
2 tbsp. butter or safflower oil
2 tbsp. brown sugar
1 tbsp. lemon juice
1 1/2 tbsp. instant tapioca (Pearls)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla
1/2 cup apple juice concentrate
1/2 cup water

Melt butter or substitute on stovetop in sauté pan on medium heat. Add apples and sauté for 5 minutes. Add remaining filling ingredients and cook over medium heat, stirring occasionally until apples are soft and liquid has thickened. Scoop apple mixture into baked crust.

Optional: Serve topped with non-dairy whipped cream, ice cream or frozen substitute.

This was a super easy and quick apple pie recipe that turned out delicious! The crust had a nice texture with lots of cinnamon flavor, while the filling was light and sweet. I used the safflower oil instead of butter and it worked great. My husband loved it!
