SWEET ONION & OKRA RELISH 
1 c. cider vinegar
1 c. water + 1/4 c. coarse (Kosher) salt
1/2 c. sugar
2 tsp. pickling spices, tied in cheesecloth to boil
1 lb. fresh whole okra
1 lg. red onion, sliced
1 med. red bell pepper, cored, seeded, cut in 1 inch pieces

Over medium-high heat in a 3 quart saucepan bring to boil vinegar, water, sugar, salt and spices. Add okra, onion, pepper, return to boil. Remove from heat, cool. Refrigerate covered for 8 hours. Will keep in refrigerator 1 week. Remove spice bag before serving relish. 4 cups.
