TURNIP & ONION RELISH 
5 c. shredded white turnip
2 c. chopped onion
4 tsp. salt
4 c. sugar
3 c. white vinegar
3/4 tsp. BLAIR paprika
1 tsp. BLAIR yellow food coloring

Combine turnip, onion and salt and let stand for 1 hour. Drain. Combine sugar, vinegar, paprika and food color and bring to a boil. Add drained turnip mixture and simmer for 1 minute. Ladle into hot, sterilized jars and seal. Process in boiling water bath for 5 minutes. Yields: 5 pints.
