LITTLE FROZEN CHARLOTTE RUSSE | |
1 pkg. any flavored cake mix 1 pt. ice cream 1 can prepared cake icing You also need 24 four-ounce plastic cups, roll of clear plastic wrap and candy garnishes (optional). Prepare cake mix using the directions on the box and bake in a jelly roll pan or in other pans so the cake is only 1-inch high. Cool the cake. Find a cookie cutter or small glass that will cut circles of cake that will just fit into the plastic cups. Cut 24 or more circles of cake and place in plastic cups. Add a tablespoon or so of ice cream and top with cake icing. Add holiday candy garnishes such as hearts in February if you like. Wrap in clear plastic and freeze. To serve, remove from freezer 10 minutes before serving. We used to keep them in our church freezer and sell them at 25 cents each to children during our coffee hour. |
