GRILLED SALMON WITH HONEY MUSTARD BROWN SUGAR CRUST | |
4 salmon fillets (6 oz. each approximately) kosher salt ground black pepper 1 to 1 1/4 cups dark brown sugar 1/4 to 1/3 cups honey Dijon mustard Remove skin rinse fillets and check for bones. Pat dry apply Kosher salt and black pepper liberally and rub into meat on all sides. Crumble brown sugar on a plate to remove all the large lumps. Brush mustard all over fish and then coat fish with brown sugar. Grill over direct heat turning once (3 to 5 minutes). Check for doneness by pushing on fish - it should flake.
