“GRILLED SALMON WITH HONEY MUSTARD BROWN SUGAR CRUST” IS IN:

GRILLED SALMON WITH HONEY
MUSTARD BROWN SUGAR CRUST
 
4 salmon fillets (6 oz. each approximately)
kosher salt
ground black pepper
1 to 1 1/4 cups dark brown sugar
1/4 to 1/3 cups honey Dijon mustard

Remove skin rinse fillets and check for bones. Pat dry apply Kosher salt and black pepper liberally and rub into meat on all sides. Crumble brown sugar on a plate to remove all the large lumps. Brush mustard all over fish and then coat fish with brown sugar.

Grill over direct heat turning once (3 to 5 minutes). Check for doneness by pushing on fish - it should flake. Let rest for several minutes.

I tried this tonight for the first time I cooked salmon. I didn't have dark brown sugar so I used light brown. It was fabulous! So easy! Thank you for the recipe, I will be doing this one again and again!

I kept the skin on one side.I only sugared and put mustard on the side without the skin. The skin peeled off very easily after cooking for the first five min. Flipped and cooked until the thin part part of the Salmon was done. Then I finished with the thickest part until done It was easy and very easy to grill! Usually fish falls all apart on the grill. This recipe is a keeper, thank you for sharing it with us Keith N.

I've made this twice now, and my family loves it. However, the brown sugar didn't form a crust, instead just glazing the salmon. It was still fabulous, but I'm wondering why it didn't crust. Not enough kosher salt? I thought I put on quite a bit.
