ADAM'S FAVORITE PUMPKIN APPLE
MUFFINS
 
2 1/2 c. all-purpose flour
2 c. sugar
1 tsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, lightly beaten
1 c. solid pumpkin
1/2 c. vegetable oil
2 c. chopped apples

In large bowl, combine first 5 ingredients, set aside. In medium bowl, mix eggs, pumpkin and oil. Add liquid ingredients to dry ingredients. Stir just until moistened. Stir in apples. Spoon batter into greased or paper-lined muffin cups filling 3/4 full. Bake in preheated 350 degree oven for 35-40 minutes or until toothpick comes out clean. Makes 18 large or 24 small muffins.

I enjoyed this recipe a great deal. I did not have enough pumpkin, so I added a 1/4 cup of butternut squash. I also did not have enough apples, so I added 3/4 cup of raisins. I would make this recipe again.
