CALYPSO CHICKEN | |
3-4 lb. cut up chicken (pick of the chick) 3/4 c. Bisquick 2 tsp. salt 1/4 tsp. red pepper 1 tsp. paprika 1/2 c. shortening 1 chopped onion 1 clove garlic, chopped 1 c. hot water 1 tsp. salt 1/4 tsp. pepper 1 tsp. curry powder 1 can (16 oz.) tomatoes 1/2 tsp. parsley 1/2 tsp. thyme 1/2 recipe Bisquick Dumplings Shake chicken in paper bag with first 4 ingredients. Heat shortening in frying pan. Brown chicken on all sides. Add onion and garlic; saute until tender. Add water, salt, pepper, curry powder, tomatoes, parsley and thyme. Bring to a boil. Cover and cook at lower temperature 1 1/2 hours. Make dumplings as directed on package of Bisquick. Make them bite-size. Cook with chicken until done. 4-6 servings. |
