CHICKEN & DRESSING CASSEROLE 
1 lg. chicken, cooked & picked off bone

2ND LAYER:

3/4 c. celery
1/2 c. onion
2 tbsp. parsley
1/2 c. butter

Saute above. 1 tbsp. salt 1/16 tsp. pepper 1/2 to 1 tsp. poultry seasoning 1 tsp. sage 3 tbsp. chicken broth

Set aside 1 cup dry bread crumbs.

3RD LAYER:

1 c. chicken fat or butter
1 c. flour
4 c. chicken broth
1 c. milk
2 tbsp. salt

1ST AND 2ND LAYERS: Grease casserole and arrange chicken on the bottom. Saute first 4 ingredients. Add other ingredients to make dressing. Put dressing on top of chicken.

3RD LAYER: Melt butter or chicken fat, blend in flour, chicken broth, milk and salt. Stir constantly until thick. Blend part of hot mixture into 4 beaten eggs. Add remaining hot mixture and cook 3 to 4 minutes. Pour over dressing layer. Top with bread crumbs. Bake at 350 degrees for 1 hour.
