SICILIAN RICE, ITALIAN SAUSAGE
AND WALNUTS
 
1 lb. Italian sausage, cut up in 1/2 in. pieces
4 c. chicken broth
2 lg. fresh tomatoes, chopped coarsely
1 lg. yellow onion, sliced thin
1 c. fresh mushrooms, sliced
1 lg. bell pepper, green, red or yellow
3 cloves garlic, chopped fine
1/2 c. walnuts, chopped fine
2 tbsp. olive oil
3/4 c. short grain rice (Aborris would be nice)
Salt and pepper to taste

In a 6 quart heavy pot brown sausage in olive oil. Remove and drain on paper towel. Saute' onions in remaining oil until lightly brown. Add mushrooms and pepper and saute' 2 or 3 minutes. Add chicken broth, tomatoes, garlic, walnuts and bring to a boil. Add rice and cook until tender (about 15 minutes), covered. Serve. Serves 6.

This was absolutely delicious ... we were looking for a pork recipe for New Year's Day (southern tradition) and this really hit the mark. Had to substitute pecans for walnuts (but that's southern, right?), the rice needed at least 20 minutes, and I would have blanched the tomatoes first to avoid the annoying little rolled-up spears of tomato skin, but none of that mattered as the flavor was out of this world. My husband awarded the highest of his accolades ... "Put it on the menu!!"
