ITALIAN SAUSAGE AND RICE
CASSEROLE
 
12 oz. sweet Italian sausage
12 oz. hot Italian sausage
1 tbsp. oil
1 lg. green bell pepper
1 lg. red bell pepper
1 c. rice
1 large or 2 small onions, sliced thinly
4 cloves garlic
1/2 c. canned chicken broth
1 tsp. fennel seeds
1/2 tsp. oregano
1/2 tsp. black pepper
fresh basil, to garnish

Prick sausage with fork and place 1/4 to 1/3 cup water and cook, covered, for 5 minutes. Then cook, uncovered, for 10 minutes. Remove sausages after they've been browned and now add oil to skillet plus the drippings and in this cook, sliced peppers and onions until semi-crisp. Add chicken broth, rice, and seasonings.

Cut sausage into desired pieces and add.

Transfer to greased baking dish and bake in a preheated 375°F oven for 30 minutes. Garnish with fresh basil leaves.

This is delicious and great for families and a cold night. (and inexpensive!) I suggest using 2 cups of rice rather than one. I used turkey sausage for the recipe. Another great recipe is with noodles instead of rice and turkey ham(or regular ham, but you can't taste the difference, so you might as well do the healthier of the two) instead of sausage). Thanks for the recipe! I'll definitely make it again!

This recipe was a HUGE disappointment. I took the last reviews suggestion and added more rice and because of that I also added more chicken broth. I started with the suggested cooking time of 30 min. and it was in the oven for close to 90 min and the rice still wasn't cooked. It was also tasteless so I added spaghetti sauce and kept adding more and more liquid to it so the rice could cook. I also topped it with foil with the thought of steaming the rice. We ate it but I would never make it again.

I used brown rice so I pre-cooked it ahead. I also used chicken sausages. It was very good. I would make it again.

I sauteed peppers, onions and mushrooms and mixed it with cooked rice, put the rice in a baking dish with the cooked sausage on top, then covered with the broth mixed with a roue of flour and butter. It was delicious.

Hmmm, this was delicious. However, I don't understand how 1 cup of rice, is supposed to cook in just 1/2 cup of broth, uncovered...???? I ended up making the 1 cup of rice separately in a sauce pan with the normal 2 cups of liquid, then adding the cooked rice to the rest of the casserole when I put it in the oven.
