ENGLISH HARD CAKE 
2 1/2 c. unbleached flour
1 c. toasted walnuts, chopped
2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter
1 scant c. sugar
2 eggs
1 tsp. vanilla
Cinnamon
Sugar

Combine the flour, walnuts, baking powder, and salt. Cream the butter and sugar together. Beat in eggs, one at a time. Stir in vanilla. Add the dry ingredients, mixing until combined. The mixture will be crumbly. DO NOT BEAT into a soft, creamy mixture. Shape into walnut-sized balls. Arrange in circles in a greased 9 inch round cake pan. Sprinkle with cinnamon and sugar. Bake at 350 degrees for 30 to 40 minutes. DO NOT overbake! Serve with a pot of English tea or strong brewed coffee.

TIPS: To toast walnuts, place in 350 degree oven for 10 minutes.
