NACHO'S AND CHEESE 
1 lb. ground beef
1 lb. Velveeta cheese
1 lg. bag nacho chips
1 pkg. taco seasoning
1 can Rotel tomatoes

Put cheese and Rotel tomatoes in crock pot and heat until cheese is melted and smooth. Stir often while melting. (Can also use the microwave to melt cheese.) Keep warm. Brown beef, then add taco seasoning. Add a little water if too dry. Keep warm.

To serve: Put nacho chips in individual bowls. Add small amount beef mixture, then pour cheese mixture on top. Can add a spoon of sour cream and some sliced jalapeno peppers if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
