LISA'S ITALIAN SAUSAGE AND
SPINACH CASSEROLE
 
1 (1 lb.) pkg. mini-penne pasta (cooked and drained)
1 (1 lb.) pkg. hot or mild Italian sausage (cooked)
2 cups fresh spinach
1 cup onion
1 tbsp. minced garlic
1 1/2 cups shredded Mozzarella cheese
1 cup ricotta cheese (I use fat free)

Preheat oven to 375°F. After cooking pasta and sausage, place all ingredients in a large mixing bowl and blend thoroughly. Place all blended ingredients into a casserole dish sprayed with Pam and cook until bubbly. Freezes and reheats great!
