ITALIAN SAUSAGE GREEN PEPPER AND
SHELLS CASSEROLE
 
4 lg. green peppers
1 onion, sliced
2 tbsp. oil and 2 tbsp. butter
1 clove garlic, minced
2 lb. Italian sausage
1 (1 lb.) can tomatoes, peeled
1 tbsp. basil
Salt and pepper

Seed peppers and cut into 1 inch strips. Heat oil and butter in a skillet and add peppers, onion and garlic. Cook until peppers blister and onions are tender. Cover and simmer for 5 minutes. Remove peppers and onions with a slotted spoon and set aside.

Add sausage to skillet and brown well on all sides. Cover and simmer for 15 minutes. Cut sausages into 2 inch lengths and return with peppers and onion to skillet. Add tomatoes and pepper to taste. Cover and simmer for 15 minutes. Cook several cups large shells until they still have a slight bone. Place in a large casserole and cover with sauce. Bake at 350 degrees for approximately 30 minutes. Can do ahead. Serves 6 to 8.

Tastes better the next day. This recipe doesn't seem to have much flavor synergy - you are eating one ingredient or the other. I cut the sausage in to smaller bitesize pieces.

Previous reviewer said that it did not have much flavor. Wonder if a sprinklin of cheese over this - before putting into oven, would increase flavors ?
